These corn bites are perfect to satisfy your cheese cravings! They are not only gluten- free, but also super easy and quick to prepare. The cream cheese makes them soft and moist and the chilli peppers add so much flavour. If you are not a fan of spicy food, you can simply add a small hand full of finely cut red bell pepper. I love to serve the corn bites with a salad or a tomato soup.

Ingredients

(makes 6 rolls)

120g cornflour

60g low fat cream cheese

20g grated cheddar cheese

1 egg

100 ml water

1 green chilli pepper

1 tsp baking powder

1/2 tsp salt

Method

Preheat the oven to 160 degrees C.

In a medium bowl, combine the cornflour with baking powder and salt. Add the cream cheese, water and egg to the mixture and stir until all ingredients blend together.

Carefully cut the chilli pepper into thin slices. Fold in the chilli slices and cheddar cheese.

Line a baking tray with parchment paper. Use your hand to from small balls from the mixture and place them on the baking tray. Slightly flatten the balls with your hand or a spoon until they are about 1-2 cm thick.

Place the tray into the oven and bake for 10- 12 minutes. Serve the cheese bites while they are still hot.
