What is better than cookies? Cookie dough! Super creamy, delicious and put together in under 5 minutes this snack is one of my all time favourites! Don’t worry, the dough is perfectly safe to eat without baking. It is made from coconut flour, peanut butter, plant based milk and maple syrup.  You can also add chocolate chips, cocoa nibs or shredded coconut if you like. Looking for a high protein snack? Simply use vanilla protein powder instead of coconut flour.

Ingredients

(1 serving)

2 tbsp peanut butter (roughly 30g)

2 tbsp of plant based milk (or regular milk)

2 tbsp of coconut flour (or protein powder) 

1 tsp maple syrup

1/2 tsp vanilla extract

a pinch of salt

Method

Mix all the ingredients in a small bowl, stir until well combined. Serve with apple slices or enjoy pure.
