In Germany we say Kaiserschmarrn to shredded pancakes. I like to call them pancake bites, because they actually make a pretty cool finger food. Which makes them a perfect addition to any brunch. You can get your sweet fix without eating a whole pancake. I love to dip them in different sauces, such as apple sauce or mango puree.

Ingredients

(2 servings)

100g wholegrain flour

4 tbsp apple sauce (unsweetened)

2 eggs

80ml of sparkling water

60g raisins

1tsp cinnamon

1tsp baking powder

Method

Mix the flour with the baking power and cinnamon. Add the apple sauce, eggs and water. Cut the raisins in half and add to the batter. Whisk until all ingredients are combined smoothly. Set aside for about 10 minutes.

Heat a tablespoon of oil in a large pan. Pour about half of the batter into the pan and make a big pancake. Turn it around when you start seeing bubbles in the batter. Repeat with the remaining pancake batter. You should roughly get 2-3 big pancakes.

Once all pancakes are done, cut them into bite- size pieces. Serve with extra cinnamon and fresh fruits and Yogurt. Enjoy.
