Have you tried your oatmeal in a savoury style? It is a great alternative to the sweet version and the chilli flakes will definitely wake you up. Try this recipe with a hand full of spinach leaves, red pepper or green kale added to your oats while they are cooking. I also like to add some fresh grated ginger.

Ingredients

(1 serving)

50g quick oats

200ml plant based milk (I used oat milk)

1 egg

1 spring onion

1 tsp turmeric powder

chili flakes

salt and pepper

Method

Place the oats in a medium sauce pan and mix with turmeric. Add milk and start cooking on medium heat. Stir constantly. Add more milk if needed.

In the mean time add some oil to a frying pan, just so that the surface is lightly coated. When the pan is on medium heat, crack an egg into it. Cook until the whites are firm, but the yolk is still runny. Season with salt and pepper.

Once the oatmeal has a creamy texture, add a pinch of salt and transfer it into a bowl. Use a spatula and place the egg on top.  Cut the spring onion into small pieces and add to the porridge. Sprinkle with chilli flakes. Serve immediately. Enjoy!
