You want to impress your date with a fancy homemade dinner, spoil your friends or want to show off, when your in-laws are coming over? – This recipe got you covered! Salmon does not only make your dinner look super elegant, it is also an excellent source of protein and omega 3 fats. This recipe will show you the basics of preparing salmon in the oven. The method is the same for salmon steak (like the one in the picture) or fillet. Try adding the salmon to your salad or oven roasted vegetables. I love mine with mashed sweet potatoes and broccoli, drizzled with yogurt and herbs! Buying frozen salmon is often the less expensive option. Simply place the fish in a shallow pan and thaw it in the fridge over night.

Ingredients

(2 servings)

2 medium salmon steaks (about 200g each)

3 tbsp olive oil

1 tbsp honey

lemon juice from 1 lemon (plus extra for serving)

1-2  tsp rosemary (fresh or dried)

salt and pepper to taste

Method

Preheat the oven to 200 degrees C, with the rack placed in the middle. Lightly grease a baking dish or use parchment paper.

In a small bowl mix the olive oil, lemon juice, honey and rosemary.

Marinade the salmon with the mixture and sprinkle with salt and pepper. Transfer the salmon into the oven pan. If you are preparing fillets makes sure you place them skin side down.

The roasting time of the salmon depends on it thickness. Use a fork to check if the salmon flakes easily, if it does, it is ready. A medium sized piece will take about 25- 35 minutes.

Serve the salmon with some extra lemon juice or slices and sprinkle with some more pepper. Enjoy!
