These fluffy buttermilk rolls are pure homemade breakfast goodness. No need to leave the house to go the bakery in the morning, what comes in handy as winter is approaching. With only three ingredients the rolls are super easy to make. If you want to you, can topp them with some brown sugar before baking. They also work perfectly as burger buns or as a side to your Thanks-giving dinner. Store them wrapped up in a cotton kitchen towel to keep them fresh longer. 


(makes 7-8 rolls)

250g wholegrain flour (I used spelt)

200ml buttermilk

3 tsp. backing soda


Preheat the oven to 180 degress C. Prepare a baking tray with parchment paper.

Mix the flour with the baking soda and than add buttermilk.

Tip the dough onto a clean surface. Use a little dusting of flour to stop it from sticking. Knead until all ingredients are combined well.

Now roll out the dough into a large rectangle. Fold it four times, so you get layers. Use a round cookie cutter or a glas to cut out the rolls. Make sure you don’t press to hard, to keep the dough in different layers.

Transfer the rolls onto the baking tray. Place them right next to each other, to make sure they rise upwards and not sidewards.

Glaze the dough with water or oil.

Put in the oven and bake for 20- 25 minutes. Enjoy!
