Overnight Carrot Cake Oats

These overnight oats safe me, whenever I have to get up early. I just prepare them in a screw top glas and simply grab them out of the fridge before I leave the house. Oats will not only boost your energy levels, and keep you full till lunch, they are also inexpensive. The nuts in this recipe give your breakfast a little crunch and if you like you can add raisins or cranberries.

Ingredients

( 1 serving)

50g rolled oats

1 – 2 carrots

1 tbsp almond butter

1/2 tsp of cinnamon

1/2 tsp vanilla extract

4 walnuts or pecan nuts

For the topping

30g low fat cream cheese

30g Yogurt

1tbsp maple syrup

 

Method

Soak the oats in hot water, until they have a creamy texture. Grate the carrots and combine with the oats. Add almond butter, vanilla extract, cinnamon and chopped nuts. Stir well.

Fill the oat mixture into a glass.

Whisk together the ingredients for the topping and add on top of the oat mixture.

Place in the fridge overnight. Enjoy the next morning and have an awesome start into your day!
