No sugar, no flour, but maximum taste! Thanks to the black beans these brownies not only get a soft texture, but also become a protein rich snack. I sometimes even grab one as a quick breakfast. Try to mix in some nuts or cocoa nibs for a little crunch, before you fill the batter in the baking dish. I love adding cherries, they give the brownies a fruity flavour and make them even more fudgy. For a tasty frosting simply combine half an avocado, a tablespoon of cream cheese, a tablespoon of cocoa powder and some honey.

250g black beans

50g peanut butter (unsweetened)

1tbs oil

2 eggs

100ml maple syrup

50g cacao powder

1tsp baking soda

1tsp vanilla extract

Preheat the oven to 170 degrees C.

Combine the beans, peanut butter, oil, eggs and maple syrup in a large blender. Add a splash of milk if needed. Mix until smooth.

In a large bowl mix the baking soda and cacao powder. Combine with the batter from the blender and add vanilla extract.

Lightly grease a medium baking dish or use baking parchment and fill in the mixture.

Bake for about 20 to 25 minutes.
