These cute banana- oat cups are super quick to make and perfect for a Sunday brunch. I also love them as a dessert or a quick afternoon snack. If you don’t have a muffin tin you can also use paper cupcake liners. Use coconut or soy yogurt to make them vegan.

Ingredients

( 8 Banana- Oat- Cups )

1 banana (plus extra slices for topping)

100g rolled oats

2 tbsp coconut flakes

30g honey

400g greek yogurt

cooking oil to grease the muffin tin

dark chocolate, coconut flakes to garnish

Method

In a large bowl smash  banana with a fork, mix in oats, coconut flakes and honey. Put in the fridge for about 30 minutes.

Preheat the oven to 180 degrees C.

Lightly grease the muffin tin and fill in mixture. Use a teaspoon to press the mixture on to the inside of the tin into a cup shape.

Bake for 15-20 minutes.

Let the cups cool down and fill with greek yogurt.

Top with banana slices, cut dark chocolate into small pieces and use to garnish, sprinkle cups with coconut flakes.
